Cecina” is a beef-aged cured ham that originated in the northern region of León, Spain.
Using only salt, it is carefully and slowly cured for more than a year.
No additives are used, and the original flavor of the beef can be enjoyed in this craft ham.
Japan's first Shorthorn Wagyu, Cecina, was born.
The current president, Shinji Fugane, visited Spain through an acquaintance and was shocked when he tasted the authentic Cecina. I want to make this cured ham with Iwate Shorthorn Wagyu beef! After repeated research, the first Cecina made from Iwate Shorthorn Wagyu beef was finally born in Japan.

Cecina is made mainly from the outer thigh part, and the salt used for salting is Noda salt, Iwate sea salt made by the traditional wood-fired direct boiling method.
Both of these products are essential to the history of Iwate’s food culture, and when you eat them, you can strongly feel the local climate of Iwate.
Noda Salt has been on sale since 2020, and has been featured in various media and won awards in food competitions, and is gradually gaining recognition for its product quality and efforts.
